Consider these advantages of the convection oven compared to the other types of ovens while choosing the most efficient equipment for your professional kitchen.

Convection oven compared to a conventional oven

  • A conventional oven has two heating elements: one on the bottom and the other on top. The bottom heating element is used for cooking and baking. The top heating element is mostly used for broiling. Because a conventional oven doesn't circulate the air like a convection oven, hot spots of air might appear causing uneven cooking. Therefore, you might need to turn the baking pan to cook your dish properly.
  • In convection ovens, the cooking process is based on the hot air circulation inside the oven. It provides faster cooking, even heat distribution, less moisture collection, and a crispy surface of the dish.

Convection oven compared to air fryer

  • As a matter of fact, an air fryer is a small countertop version of a convection oven. They use the same cooking principle of circulating the hot around the dish until it is cooked on the inside and crispy on the outside. However, it holds smaller amount of food so it is not the best option for the industrial kitchen.
  • Therefore, if you are looking for equipment for a pastry, bakery, pizzeria, gastronomy, large kitchen, banqueting, catering chain, or fast food and want to cook large amounts of food, the industrial convection oven would be the best option for you.
